To prepare, place the corned beef in a saucepan with fresh carrots, onions, mustard, and a bundle of herbs (thyme and parsley, tied together). Cover with cold water and bring gently to a boil. Simmer, covered, for 2 hours.
Afterwards, discard the outer leaves of the cabbage, cut it into quarters, and add it to the pot. Cook for an additional 1 to 2 hours, or until both the meat and vegetables are soft and tender.
